Lathyrus clymenum is a flowering plant in the Fabaceae family, native to the Mediterranean. The seeds are used to prepare a Greek dish called fava santorinis. The plant is cultivated for more than 3.500 years on the island and has a Protected Designation of Origin.

The internal temperature varies from 21 to 24 Degrees Celsius throughout the summer period due to the bioclimatic vernacular construction of the residence.
